The Lazy Lady's Summer Peach Cobbler


Can you slice peaches? Can you buy flour? Can you turn on an oven?

Then you can make this cobbler. 

The best summer desserts are those that take as little time, effort, and ingredients as possible. Hence, this easy, breezy celebration of summer produce. It's unbelievably flexible and forgiving (soufflé, this is not). In fact, you don't even have to make your measurements that exact. Just chop, mix, dump, and bake. You're welcome.


The Lazy Lady's Summer Peach Cobbler


A whole bunch of peaches (like, maybe 9 but it's up to you)
1/4 cup + 1/3 cup sugar
1 cup flour
1/3 cup oil
Pinch of salt


Preheat your oven to 350F. Chop your peaches into one-inch chunks. In a bowl, toss the peach chunks with 1/4 cup sugar, then dump into a 9-inch round cake pan. 

Using the same bowl (fewer dishes!), mix the sugar, flour, oil, and salt until a dough forms. Break off palm-sized pieces of dough, flatten into a rough disc, then lay on top of the peaches. Basically, you're just covering the peaches in little patchwork pieces of dough. Don't worry if the dough doesn't cover the whole thing. 

Bake for 35-45 minutes, until golden and the peaches are bubbling. Enjoy!
